Echoing the décor of the hotel, Executive Chef Dennis Kuipers' menu combines the traditional and the modern. The dishes served in the popular Dylan Restaurant show Kuipers love of traditional French cooking. He has combined the freshest ingredients to produce a menu that is delicious and unique to The Dylan.
The Restaurant, which is as popular with locals as with hotel guests, is open each day for breakfast, lunch (Monday to Friday) and dinner (Monday to Saturday). It seats up to 40 people and rather aptly is housed in the old bakery, which was set up in 1787 by the Regents, who then owned the building. The bakery flourished until 1811 and diners can still see the original ovens, which were discovered intact during restoration work.
During the summer months, the beautiful interior courtyard is also open with drinks and a light menu served all day. |
The Concierges at The Dylan can arrange several activities to ensure guests see Amsterdam in all its glory. The hotel has a fleet of bikes for guests to use during their stay while the less energetic can see the city from the comfort of a classic salon-boat as it cruises up and down the city's iconic canals. The hotel can even arrange for lunch or dinner to be served on the boat.

The Dylan has a number of different spaces that are ideal for all types of events from business presentations to romantic dinners. Since July the hotel has a new private room available with a connecting glazed courtyard. The Dylan has attracted the international, award-winning, design company FG Style to oversee the renovation and to ensure The Dylan maintains its reputation as one of the world's most stylish hotels.
The current spaces available include - Josephine, a room which can seat up to 8 people for meetings, lunch or dinner. - The Regents Room, can seat up to 32 guests and is a light airy room which still has the original ceiling and fireplace. - Ariana, the recently build private room and the true jewel of the hotel. The room has a unique glass roof construction, 13 metre relief wall, porcelain chandeliers and a double fire place. It can seat up to 80 persons for dinner. - The Dylan Restaurant can be hired for private events with up to 48 guests. The room, formerly an 18th century bakery, is full of character with the original ovens on show. |
